Paula's Cheese Biscuits


My sweet daughter brought home a library book from school yesterday for us to share.  It was Paula Deen's Kitchen Classics.  She said the library had another Barefoot Contessa cookbook and a diet cookbook, but she thought I would like this one since I watch her on TV.  Well, she was right.  I've been wanting to check out some of Paula Deen's cookbooks.  I just love watching her shows and her food always looks so Southern good.


I opened up the book about halfway and a recipe jumped off the page.  It was for Cheese Biscuits, which is one of Lady & Sons signature items.  Paula said they bring them out to the customers either while they're waiting for a table or have just sat down at their table.  What a great way to start a meal!  They were very easy to make and no yeast was needed.  My family really enjoyed them.  They are even good with a little honey at the end of your meal...Yes, I had 2 biscuits at dinner!  They would be good for breakfast or brunch as well.

I wrote down 20 recipes that I want to try from this cookbook.  There are so many...I had a hard time narrowing it down.  I have to get my own copy of this cookbook so I can try even more.  You should check it out too.  There aren't any pictures, but that leaves more room for recipes.  You can always go to Food Network or Paula Deen's website to get more of Paula's recipes with pictures.

Paula Deen's Cheese Biscuits
From Kitchen Classics

Ingredients:

2 C self rising flour
1 tsp baking powder
1 tsp sugar
1/3 C Crisco shortening
3/4 C finely grated cheddar cheese
1 C buttermilk

Preheat oven to 350 degrees.  Spray a baking sheet with non-stick cooking spray.

In a large bowl, mix self rising flour, baking powder, and sugar together using a fork.  Cut in shortening using the fork until it resembles cornmeal.  Add the grated cheese and stir.  Stir in the buttermilk just until blended.  Use an ice cream scoop to form biscuits and place onto prepared baking sheet.  Bake for 12-15 minutes.  Enjoy!

Tips:  
  • To make buttermilk: For every 1 cup of buttermilk you need for the recipe, mix together 1 T white vinegar and enough milk to make 1 cup.  Let it sit for 5 minutes and you have buttermilk! 
  • To make self rising flour:  For each 1 cup of all purpose flour, add 1 1/2 tsp baking powder and 1/2 tsp salt.  So for this recipe, you would need 2 cups all purpose flour, 3 tsp baking powder, and 1 tsp salt to make up your self rising flour.  Don't forget to add the extra baking powder the recipe calls for too!
