Paula Deen's Helpful Hints

I wanted to share some of Paula's Helpful Hints from her Kitchen Classics cookbook...

If you don't have any eggs for a baking recipe, use 2 Tablespoons of corn oil plus 1 Tablespoon of water as a substitute

Store eggs tapered-side down for longer life 

When using muffin tins and you don't have enough batter to fill them all, pour water into the empty cups to prevent the pan from scorching (I wish I would have learned this one sooner!)

When sauteeing, always heat your pan before adding the fat. This will temper the pan and reduce sticking 

Add 1 Tablespoon of vinegar to beef stews to tenderize the meat 

When boiling shell-on crab, shrimp (or any shellfish), add 1 Tablespoon of vinegar to the water to help loosen the meat from the shellWhen cooking green vegetables, add 1 teaspoon of lemon juice to the pot to help retain their color

My favorite:  "Treat your family like company and your company like family."
