Mini Pineapple Upside Down Cakes




YUM...brown sugar topping with pineapples and cake...brings back so many childhood memories.  My mom made the best pineapple upside down cake.  She would always use a cast iron skillet so the topping was nice and caramelized on top.  This is my mom's tried and true recipe.  I just used muffin tins instead of a cast iron skillet. 


I really like individual little desserts.  My girls can easily help themselves and they look pretty fancy.  I decided to try this recipe using jumbo muffin tins and regular muffin tins.  This recipe will make a batch of 6 jumbo size or 12 muffin size cakes.


Cake Ingredients:

2 eggs
2/3 cup white sugar
4 Tbsp pineapple juice
2/3 cup all purpose flour
1 tsp baking powder
1/4 tsp salt

Topping:

1/4 cup butter (1/2 stick or 4 Tbsp)
2/3 cup brown sugar (packed)
1-can pineapple rings
6-maraschino cherries

Preheat oven to 350 degrees.  Spray your muffin tins with non-stick cooking spray. 

In a mixing bowl, add eggs, white sugar, and pineapple juice.  Beat for 2 minutes.  In a separate bowl, sift together the flour, baking powder, and salt.  Add to the wet ingredients and turn mixer back on for 2 minutes. 

In a small sauce pan, melt the butter and add the brown sugar.  Stir on low heat for one minute.

Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin, then place a pineapple ring on top.  Add a cherry in the middle of each pineapple.    Pour cake mixture over to fill muffin tin 3/4 of the way full.  If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits.



Bake jumbo cakes for 25 minutes.  Bake regular cakes for 20 minutes.  If you choose to make a large cake, bake for 22-25 minutes in a 10 inch cast iron skillet.  The cake is done with a toothpick inserted in the middle comes out clean.


This is the hard part...waiting for warm cakes to finish baking.  



Remove from the oven.  Let cool in pan for 3 minutes.  Run a knife around the edge of each cake to help loosen in case it sticks a little.  Place a wire cooling rack on top, and quickly flip over on top of sheet tray to catch extra drippings. 



Place wire rack of cakes on sheet tray to cool. 




Now it's time to Enjoy!

    Beware you might need to put a cookie sheet under your muffin tin. Mine spilled over in the over oven a little and smoked up the kitchen! Oops lol

  17. I look forward to trying these! One little thing I always do different to my pineapple upside down cakes is put 3 or 4 of the cherries on a food processor along with some pineapple bits and add them to the batter it adds color and moistness to the cake!

  37. I made these tonight yummy! I made them in a 6 muffin pan so I had a little left over. I took that and put it in a one cup rubbermaid container for 2 minutes in the microwave and it turned out just as good!

  51. I made these for a fundraiser last winter...big hit! I baked them in cupcake liners so it would be easier for the buyers to bring home a sack full. I prefer the look of the whole ring as opposed to the chunks but both taste the same...YUMMY!

She always made pineapple upside down cake for Easter & I haven't had it in the nearly 12 years she's been gone. I made a few batches of these in the giant muffin tin this morning before church - that's how quick & easy they were!     1. It makes 6 jumbo size or 8 regular cupcake size. Fill it at least 3/4 of the way full since these don't rise much.

  56. Mine came out slightly tough and hard to cut lol. I think I might have baked them a tad too long or did something wrong with the cake batter. I think I will use a white cake mix next time and omit the water and just use pineapple juice but Ill have to wait for a crowd to feed because that would be a LOT of min cakes :)

  59. I found these to be very sweet, and I like sweet! But this was too sweet. However the cakes taste so good alone that I am going to modify this into a cupcake recipe.
    Also, the instructions say to spoon the brown sugar mixture over the pineapples but the pictures show the brown sugar under the pineapples. Does that make a difference? Because I put it over the pineapples and they ended up falling off of the cakes.

    Using a box mix do you replace water with the juice? Or do you just add the juice as an extra ingredient?

    1. I would use the 4 Tbsp of pineapple with additional water to equal the amount the box mix needs. This will add additional pineapple flavor. Also, a box will make lots of these so you probably will need to double or triple the brown sugar topping mixture.

  68. Wow!! My boyfriend is a huge pineapple upsidedown cake fan, but I usually leave it to his mother to make it for him:) When I saw these on Pinterest I knew I had to try them! The pineapple were a bit large for my jumbo muffin tin, so i had to notch away a little segment from each. With the rest of the recipe(I had extra) I used 4 ramekins and they were perfect. My boyfriend raved about them and refused to take them home to share with his roommates:)Thanks for the great recipe!!!

  72. I added the baking powder but I used Splenda and I added a dab of vanilla. Other than that, I did everything else according to the recipe. It could just be me. Lol. I never did have much success with homemade cakes or cookies. Pies? I can do.. Idk what I do to the cakes. Haha

    Maybe for the regular cupcake pans one could use drained, crushed pineapple. That is what I do when I make regular unpide-down cake. It makes the full sized cake easier to cut, so maybe of use here?

    1. Cupcake liners would not work with this recipe since they are "upside down" and have to be inverted before serving. You can set them in cupcake liners afterwards for serving.

  81. I don't usually comment on things but OMG for this I HAD TO! This came out so good! Instead of adding Pineapple juice I used OJ and a table spoon of the Pineapple syrup out of the can... JUST PERFECTION. Wouldn't change anything else. It's amazing. Thank you! I will be trying more of your recipes very soon.

  90. I loved this idea so much that I made 12. I used a Betty Crocker Upside-down cake mix. I used the crushed pineapple included along with the brown sugar mix. I used sliced pineapple on-top of the crushed pineapple. Topped with the cake mix and cooked for 25 minutes..They were also to eat right out of the oven...Thank you for the idea.

    1. I use a Calphalon 6 cup muffin tin that are about 3 1/4 inches in diameter. Pineapple rings fit perfectly.

  102. I took these to a party this weekend and they were a hit. Super easy to make! I did some with pineapple rings in giant muffin tins and some with chopped rings in my mini-bundt cake pan (12 mini-bundt openings - a little smaller than regular cupcakes). Overall, awesome.     1. These came out adorably! I tripled the recipe (which was so easy to do with all of the 2/3 cup measurements in this recipe) to make an even 2 dozen mini-cakes. I have no doubt these will sell out quickly. I can't wait to try this recipe in my cast iron skillet!

  104. Found this on pinterest, and just had to make it. Thought I had all the ingredients, but did not have the cherries. Pineapple upside down cake would not be the same with out the cherries, so I substituted the pineapple juice/rings for peaches. It turned out wonderful. A big hit with the family. Told my husband I would make again with the pineapple and cherries, and he asked why, it was perfect the way it was! Thanks for the terrific recipe!

  109. i did want to make a suggestion. Just for appearence with people who only make the smaller version you can still have the pineapple rings... just cut a piece of the ring off and shape it back into a circle in the pan... works pretty well

  112. I have my second of 3 batches in the oven. First let me say... FREAKIN' FANTASTIC! What a great recipe. I did add 1 tsp of cake carousel butter vanilla(because I add this to everything bakeable) and 2 tblsp crushed pineapple(because that's how my G-Ma did it). I grew up in a family where we pass down iron skillets and mine (in calphalon big muffin tin) tastes just like my G-Ma's. Can't thank you enough for a new recipe to pass along. You Rock!

  113. I have my second of 3 batches in the oven. First let me say... FREAKIN' FANTASTIC! What a great recipe. I did add 1 tsp of cake carousel butter vanilla(because I add this to everything bakeable) and 2 tblsp crushed pineapple(because that's how my G-Ma did it). I grew up in a family where we pass down iron skillets and mine (in calphalon big muffin tin) tastes just like my G-Ma's. Can't thank you enough for a new recipe to pass along. You Rock!

  133. We have been making them in a skillet for years. Grandma did it that way. I love your idea too. Have you ever tried peach upside down cake? That is Grandma again. Peach is my favorite. I plan on trying both in the muffin tins. They are cute and perfect for little hands.

  137. This is such a genius idea. I'm excited that I found this posting on Pinterest. I'm so glad you thought of it and shared it. My father is a diabetic and lets face it; not all diabetics behave. Plus, this happens to be his most favorite deserts of all times. But with this thought, I would make the smaller ones. That way he can indulge at least once a month. Once again, thank you.

  147. Thanks for an inspiring idea and for wakening memories. My husband and especially my father loved pineapple upside down cake. I remember my granddaughter making a birthday card for her great grandfather one year and she drew a picture of a pineapple upside down cake on it becuase she know he loved it....of course we made one for him too. Wonderful memories and a wonderful treat for the taste buds. Thanks in so many ways. This recipe will go in my book of keepers.

I have a bake sale coming up the 7th at the Wal-Mart I work for to raise money for the Children's Miracle Network and I think these would be wonderful to make for it since as everyone said before they are individual cakes and a lot easier than making a full size and cutting it. I'll post an update and let you know how it went. :D

    1. The bake sale for Children's Miracle Network was a hit, I sold every single one that I made and still had requests for them coming. I am finishing up my last batch right now for another fundraiser we are having at work that my co-workers have asked if I was going to make them again. Thought about making a 13x9 cake just for my co-workers to enjoy :D.

    I just made these using peaches, nectarines and plum slices on top instead of the pineapple. Used half lemon juice and half water for the pineapple juice and added a tsp of cinnamon to the batter. Fabulous!

    These taste great--just really sweet. The only issue I had with these is that the recipe actually makes 11 regular size muffins/little cakes NOT 8. This wouldn't be an issue (because what's wrong with extra muffins??) except for the fact that there are layers. So if you use all of the first layer in the muffin tin before you know it makes more than 8, you have to either make more or do without for the remaining tins/extra batter.
